I have made this banana bread for years now, it is always one of my go to recipes when I have a bunch of bananas that are about to go or I want to bring something easy over to a friend’s house or I just feel like baking something. I can’t even remember where I found the original recipe and I have changed it so much that it really doesn’t resemble it anymore anyway. There is just something about having banana bread in the oven that makes me happy. I hope you like it. I also love to make Rhubarb Bread when rhubarb is in season or Pumpkin Bread when it getting cooler out.
- 4 Very ripe bananas
- 1 C Brown Sugar
- 1/4 C Butter (melted) or Grapeseed oil
- 2 tsp Vanilla
- 2 lg. Eggs
- 2 C Flour
- 1 tsp Salt
- 1 tsp Cinnamon
- 1 1/4 tsp Baking Powder
- 1/4 tsp Baking Soda
- 1/4 C Oats (optional)
- 3/4 C Dark Chocolate Chips (optional)
- 3/4 C Crushed Walnuts (optional)
In a medium bowl combine bananas, sugar, oil, vanilla and eggs
in small bowl combine flour, salt, cinnamon, baking powder and baking soda
combine wet and dry ingredients then fold in optional oats, chocolate and nuts.
Pour into buttered bread pan and bake at 350 for about an hour.
