I have to admit to being a bit of a guacamole junky while at the same time also a bit of a snob about it. It always bums me out when I go out somewhere order it and it comes with all sorts of stuff that’s not supposed to be in it like mayo or sour cream, I think it completely ruins it. This is how I make mine, it’s the real deal and always hits the spot. I always make a big batch and keep any leftovers in the fridge covered with plastic wrap, it will keep for a few days. It pairs beautifully with Raw Salsa.
- 6 very ripe avocados, scooped
- 1 lg. shallot, finely chopped
- 1 garlic clove, grated
- 1 lg. lime, juice and zest
- 1/2 bunch fresh cilantro, chopped
- 2-3 chilies Jalapeño or Serrano, seeded and finely chopped
- tomatoes, chopped
Chop up everything and place in large mixing bowl and toss together. Add in avocados and lime juice and mix. Garnish with tomatoes, do not mix the tomatoes in, they will make the guacamole watery in the fridge. Serve with tortilla chips or eat alone, I love it on tacos, burgers on salads too. www.tastespotting.com has a bunch of nice recipes for pita chips with would go perfectly.
