I like having this in the fridge pretty much all of the time. It is a great snack with veggies or pitas or to use on a sandwich instead of mayo. Folks that are used to the store bought hummus are always surprised at how easy it is to make and how much better it is, my 5 year old even loves it if that tells you anything. It is the perfect addition to and Simple Lunch.
- 2 Cans of garbanzo beans, drained and rinsed
- 1/4 Cup tahini
- 1 Garlic clove, grated
- 1 Lemon, Juice
- 1/4 Cup olive oil
- Za’atar, if you don’t have this you can use sumac, sesame seeds or paprika
- 2 tsp. Salt
Add garbanzo beans to food processor along with tahini and lemon juice. In a mortar and pestle grind salt and garlic clove into a paste (this prevents you from biting into any chunks of raw garlic) and add to food processor. Turn on processor and slowly add in olive oil and about the same about of water, process until everything is incorporated and smooth, make sure to scrap the sides between processing. You can add in anything you want to flavor it like roasted red peppers, chives, roasted garlic, olives or you can just eat as is.
