This recipe is fast, easy, delicious and great to make in the summer when all the tomatoes are in season. I think it turns out best when you use a variety of tomatoes, it seems to give it more character especially if you can find some of the purple ones to throw in.
- 2 lbs. Fresh tomatoes quartered, this is approximate and you should use enough to almost fill up your food processor
- 1 sm. Red onion or 1 sm shallots roughly chopped
- 1 Garlic clove minced
- 1/2 Bunch fresh cilantro, chopped
- 1-2 Serrano or Jalapeno peppers, finely diced
- 1-2 Limes, juice & zest
- 2 Tbl. Olive oil
- Salt & Pepper to taste
Add everything to your food processor and pulse to desired consistency, I like it a little chunky. It is best after sitting for a few hours or even the next day.
