I first saw the bones of this recipe in an Ina Garten cookbook years ago and loved it and only changed it up a little, it is simple, pretty and delicious. It’s a good dish to throw in the oven to go with just about anything, I’ve served it on holidays or even with grilled steaks. Roasting and grilling are my two favorite ways to cook veggies by far.
- 1 Whole head of cauliflower, cut into florets
- 6 Oz. Gruyere cheese, shredded
- 2 Oz. Parmesan cheese, shredded
- 4 Cloves of garlic, thinly sliced
- 4 Green onions, chopped
- 3 Tbl. Olive oil
- Salt & Pepper to taste
Preheat oven to 400. Toss everything together except for cheeses and put into roasting pan. Roast until brown on top, about 30 minutes.
