I am constantly coming up with quick and easy ideas for breakfast. I have a 5 year old that needs to be properly fueled up in the morning for his day. Often he just goes for a couple pieces of fruit and a slice or two of whole grain toast but sometimes we like to shake it up a bit and I get bored of the same thing so I rarely eat anything two mornings in a row. In the winter I find myself making eggs, toast or oatmeal and when it’s warmer out I end up eating a ton of fresh fruit and smoothies. I make a batch of almond butter about every month or so, I take a big bag of raw almonds and grind them in the food processor until I get butter. It takes about 10-15 minutes of processing and a lot of stopping and scraping the bowl but it turns out so nice and all I add is salt. We have it on toast but more then anything with sliced apples for breakfast, I keep it in the fridge and it lasts quite a long time. Sometimes on the weekends I will make breakfast tacos depending on what I have around but they usually consist of bacon, eggs, cheese, salsa and tortillas and they are always a big hit.
