As soon as I got out of Yoga class last night I had a terrible sugar craving that almost brought me to the grocery store to buy some sort of really evil frozen treat that would have had me feeling awful right after I had it for a laundry list of reasons. So I drove home and as I pulled up I saw my Basil plant out front and had a really good idea. I still had a bowl of lemons sitting on my counter from my Lemon Bars I made yesterday and some yogurt in the fridge. Frozen Yogurt was the perfect answer to my problem tonight and it turned out really good and it totally hit the spot. I did use my ice cream maker for this recipe but it might be worth a try just freezing it if you don’t have one. I think Limes would have been just as good maybe with some crushed fresh raspberries, I’ll be trying that next time.
Lemon Basil Frozen Yogurt
- 2 Cups Organic Whole Plain Yogurt, not Greek
- 3/4-1 Cup Sugar, depending on how sweet you like it
- 8 Tbl Fresh Squeezed Lemon Juice, 2-3 Lemons
- 1 Tbl Fresh Basil, Finely chopped
- The Zest of 2 Lemons
Mix sugar, juice, zest and basil with a whisk and let sit for a few minutes to let the sugar dissolve a little. Whisk with yogurt and pour into an ice cream maker and let it run for about 15-20 minutes. Store in freezer if you actually end up having any left over…
