This is one of those recipes that I came up with simply out of being in a hurry, not wanting to go the store and having a house full of hungry kids. I looked though my cupboards and fridge and this is what I had and it happen to work out really well, everyone like it. I am not a huge fan of canned tuna but it is a good thing to have on hand for times like this, you just never know when you will need some. You can add whatever veggies and herbs you like and you can also use just about any kind of short cut pasta as well. I made this for dinner and then we ended up make some Frozen Yogurt for dessert, it was not a bad night. But if you are in the mood for a sandwich instead this Red Onion and Kalamata Olive Tuna Sandwich from www.yummly.com looks like a nice option.
Tuna Pasta Salad
- 2-3 5 Oz. Cans of Albacore Tuna in Water, drained
- 1 Lb. of Pasta, I used Shells
- 1 Cup Shredded Carrots
- 1 Cup Sweet Peas
- 1 Bunch of Green Onions,Chopped
- 3/4 Cup Mayo, I use Vegenaise
- 1 Lemon, the Juice & Zest
- Fresh Herbs, I used Dill and Oregano
- Salt & Pepper to Taste
Cook pasta as directed on package in well salted boiling water and add peas in the last 3-4 minutes of cook time then rinse with cold water to cool and to stop the cooking process, set aside. Mix mayo, lemon juice & zest, herbs and green onions. Mix in veggies and tuna then add the pasta and toss. Serve right away, its pretty good leftover too.
