There are many different ways to easily feed a crowd but trying to make everyone happy at the same time can be a bit challenging. I have found that I can make the nicest dinners for guests and I often do but usually they end up liking things like this BBQ Chicken just as much and it takes hardly any work or time. There are endless flavor variations for this crock pot chicken, like tacos or soups but this is the one that everyone seems to like best. It has been hot here in the midwest this week and I have been doing just about anything to not have to turn on my oven or get stuck outside in front of a hot grill. When I think about using my crock pot I usually think about making food that is better suited for cold weather like soups but when you think about it it’s a really good solution to beat the heat while still cooking a good dinner. I like to serve these with a nice and lightly dressed coleslaw on top and avocado slices then a nice big salad on the side, perfect summer night dinner and it could not be easier.
BBQ Chicken in the Crock PotBBQ Chicken in the Crock Pot
- Chicken, I used boneless & skinless organic thighs but you can use whatever you like
- 1 Large Sweet Onion, sliced thinly
- 2 Large Bell Peppers, sliced thinly, whatever color you like
- 4-6 Garlic Cloves, Sliced
- 1 Large Bottle of your favorite BBQ Sauce, I like Stubbs
- Herbs, I used a handful of fresh Oregano
- Salt & Pepper to taste
Place everything in your crock pot and turn on high for 4-6 hours or on low for 8-10. Once it’s ready take the chicken out and shred it and then add it back to the pot to mix with the veggies and sauce. Serve on your favorite buns and toppings and enjoy.
