Sometimes I just need a little chocolate. These are not like your typical store bought fudgesicles at all, they are so much more and so much better for you. Coconut milk is packed with vitamins, minerals and nutrients, it is high in calcium and magnesium and I think it has an amazing texture and flavor. The cocoa powder on top of being delicious has tons of antioxidants and if you use raw local honey you can also help combat any seasonal allergies you might be having issues with, it’s a frozen treat you can feel pretty good about enjoying. They are not as sweet as the regular ones but that’s the nice thing about making them yourself, you can make it as sweet as you like. When I’m craving chocolate it has to be dark and not overly sweet so I make these with a lot of cocoa powder and not too much honey and for me that’s how I like them best. Even though the biggest ingredient in these is coconut milk they don’t really have a overly strong coconut flavor, the cocoa powder really takes over. This chocolate gelato recipe from www.eatingwell.com looks really similar if you don’t have popsicle molds around.
- 1 Can Coconut Milk
- 6 Tbl Cocoa Powder
- 2 Tbl Honey (you can use whatever sweetener you like, agave nectar works great as well)
- 1/2 Tsp Vanilla
- 1/8 Tsp Salt
- 1/8 Tsp Cinnamon (optional)
- Pinch of Ancho Chili Power (optional)
Incorporate all ingredients in blender until combined and smooth. Pout into popsicle molds and pour any leftovers in a small container and freeze. They take about 6 hours to freeze.
