Today was my son’s first day of Kindergarten and I needed to make something fast for breakfast and even though it’s still warm outside I was in the mood for pumpkin. When I am in a hurry in the mornings or I have to leave the house early I will often make smoothies or protein shakes for breakfast, they are easy, fast and nutritious. I had a half a can of pumpkin in the fridge from making blondies last week and it was calling my name this morning. This smoothie is more then big enough to share and when I gave my son a taste he said it tasted like pumpkin pie, which is exactly what I was going for. I have made this with pumpkin butter as well instead of the pumpkin puree, you can use the pumpkin pie filling if that is what you have but it already has spices in it so you will want to add less when you are blending.
Pumpkin Smoothie Recipe
- 1/2 Can of Pumpkin
- 1 Cup Milk (I used Vanilla Coconut Milk but you can use whatever you like)
- 1 Scoop of Vanilla Whey Protein Powder
- 1 Handful of Ice
- 1 Banana
- 1/2 Cup of Yogurt (I used Whole Organic Plain but you could use Vanilla)
- 1/4 Tsp. Cinnamon
- 1/4 Tsp. Ground Ginger
- Fresh Ground Nutmeg, I used a couple of pinches
- Ground Cloves, just a pinch
- Pinch of Salt
Put everything into your blender and blend until incorporated and smooth, enjoy right away. I would say that this serves 2.
