I have made a deal with my son now that he is in Kindergarten that I get to pack his lunch all week long but if he wants to he can pick out one day a week to eat a hot lunch at school. So far he has tried it two times and he has come home hungry because he says that there was not very many good things to eat at school. So far I think he is pretty convinced that whatever he brings from home will be much better then anything he will find in the school cafeteria. I have been making all sort of things to pack for him and I know he like these so I roasted off a batch this morning before it gets too hot outside to even think about firing up the oven and I needed to bake off a batch of oatmeal cookies for him too, it’s been a busy morning so far. Chickpeas are full of fiber and protein and are an awesome alternative to beans in other dishes, they are really good and great for you especially when you are trying to fuel a very active Kindergartener. You can season these anyway you want to , sometimes I make them sweet with a little honey and cinnamon but I really like them smoky and spicy best and this is just another recipe you can add to your list of vegan alternatives.
- 1 Can Organic Chickpeas, Rinsed and Drained and Dried
- Good Olive Oil, You will really be able to taste the oil so make sure it is good quality
- Salt & Pepper
- Lemon Juice
Toss chickpeas in a little olive oil and seasonings then give them just a squeeze of fresh lemon juice and pour them on a rimmed cookie sheet lined with parchment paper. Roast at 400 for 35-40 minutes until golden brown and crunchy. You can eat them right away or store them in an air tight container for a few days.
