There is always frozen fruit in my freezer, no matter what I will have a variety of things to make smoothies with on any given day and today I needed some mango sorbet. This recipe is easy, quick, delicious and vegan. You could even use the base without freezing it and make smoothies or popsicles if you like, it is great anyway you have it. This non dairy frozen treat is made with coconut milk that is filled with vitamins, minerals, calcium and ton of other amazing things for your body, it’s pretty much a nutritional powerhouse superfood.
Mango Coconut Sorbet
- 2 10 Oz. Bags of Frozen Mangos, Thawed (I had 16 Oz. bags so I just had to make it in two batches in my ice cream maker.
- 1 15 Oz. Can Coconut Milk
- 2 Limes, Juice and Zest
- 3/4 Cup Sugar
- A Pinch of Salt
Process all ingredients in your blender or food processor until smooth. Pour mixture into your ice cream maker and churn until you get the desired consistency. Serve right away or store in an air tight container in your freezer. I have seen it made buy just pouring the mixture into a container and freezing, but I have not tried it that way yet.
