I have been letting my 5 year old son get more and more involved in my meal planning lately so for our family sunday dinner last night I had him pick out what vegetable we would serve and he chose baby carrots. I have a feeling it was because there was a children’s movie character being advertised on the package but, hey whatever works right. This recipe is very easy and simple and you could spin it a ton of different ways depending on what you serve them with. Sometimes I make them with garlic, shallots and a little maple syrup, honey or with balsamic vinegar but because I was serving them with an already pretty sweet Balsamic Chicken and I have a ton of fresh herbs outside my house right now I went really basic and they turned out delicious and beautiful. My Dad even liked them and apparently he doesn’t eat carrots, go figure…
Roasted Carrots with Herbs
- 1 Bag Organic Baby Carrots, Rinsed and dried off (You could use any carrots you like just make sure to cut them in a semi uniform size)
- 3 Tbl. Olive Oil
- Salt & Pepper to Taste
- 1 Tbl. Fresh Herbs of your choice, I used Garlic Chives
Toss the carrots in oil, salt and pepper. and spread out on a single layer parchment lined rimmed baking sheet. Roast in your oven at 400 for about 20 minutes until the carrots are cooked and browned. Toss the cooked carrots in the fresh herbs, serve hot and enjoy.
