Football season is upon us my friends and you know there is going to be a time when you either need to bring something to a party or you are the host. There are always the usual suspects like guacamole and salsa of course but it’s nice to have something hot too especially when it gets cooler outside. I first tried a version of this dip a long time ago and it seems like no matter where I see it it is always one of the first things to disappear in a crowd. It is not at all good for you or fresh or fancy but it is what it is and once in a while I think it’s cool to make something like this to have another option to throw in to the mix of appetizers. This recipe is easy and fast to make so it’s perfect for last minute invites, I actually bought one of those little mini crock pots a while back for things just like this, they make it easy to transport and keep dips warm wherever you go. This recipe doubles easily and stores in the fridge for a couple of days so you can easily make as much as you want a head of time and just warm it up as you need it.
Spicy Sausage Dip
- 1 Lb. Sausage, you can use whatever kind you like I use spicy
- 2 Blocks of Cream Cheese
- 1 Can Rotel Tomatoes, I like the ones with the hot chills
- 1/2 Med. Onion, diced thinly
- 2 Cloves of Garlic, grated
- 1 Handful of Fresh Cilantro
- Salt & Pepper to taste
Brown sausage, onion and garlic in large frying pan and once it is brown add in the cream cheese and warm and stir until it is completely melted and then add in tomatoes and mix in. Serve hot with your favorite corn chips for dipping. This recipe easily doubles as well.
