I, for the most part only use my crockpot for soups or keeping drinks warm during parties but I have found that these carnitas turn out just as good in the slow cooker as they do in the oven. If you do not have a crockpot you can make these in a dutch oven at 350 for about 2 hours covered and then 1 more hour uncovered until you can easily shred them.
- 3-4 lb. Boneless Pork Shoulder
- 1/2 – 1 7Oz. can (depending on how spicy you like it) Chipotle in Adobo Sauce, Chop up the peppers
- 1 Tbl. Dried Oregano
- 2 Tbl. Olive Oil
- 2 Navel Oranges, one for juicing and one for slicing
- Salt & Pepper to taste
- Oil for frying, I used Grapeseed Oil
- 1 Lg. Onion, Sliced
- 6 Lg. Garlic Cloves, Sliced
Place the pork on a cutting board and sprinkle with salt, pepper and oregano then rub in the olive oil. Transfer pork into a large ziplock bag and pour the chipotles and sauce on top of the pork, squeeze one of the oranges over the pork, seal bag and place in your fridge overnight to marinate. In the morning spread half of the sliced onions, oranges and garlic on the bottom of a large crockpot. Then remove the pork from the bag and place it on top then cover it with the remaining onions, oranges and garlic. Put the lid on and cook on low for 8 hours. After about 6 hours you should be able to shred it and let it simmer the rest of the time in the juices, make sure to taste it and add salt and pepper as needed. When you are ready to serve them heat a small frying pan to high heat and add in a little oil, I like to just fry them up as I go so get however much you need to serve and fry them up until they start to crisp and brown on the edges, this process will intensify the flavors of the carnitas to a new level. The really great thing about this recipe is that you can make up a ton, shred it and keep it in the fridge until you need them and to warm up the leftovers just pan fry up the portions you need. We like to make tacos with flour tortillas, Guacamole, Salsa, shredded cheese and sour cream. They are so good, I hope you enjoy them!
