When it’s really cold outside I often want a warm and sweet breakfast to I start my day. These vegan oats are high in fiber, b-vitamins, calcium and protein and have been proven to lower cholesterol and the chances of some cancers and diabetes. The steel cut oats are nuttier and have a different texture then your regular oatmeal and I think they are so much better. You can spice these anyway you like, I love chai tea and pumpkin pie spiced things so this is what I came up with. This recipe makes 4 servings and you can keep it in the fridge for about a week or so.
Chai Spiced Steel Cut Oats
- 1 Cup uncooked Organic Steel Cut Oats
- 4 Cups Almond Milk + more for serving
- 1 Tsp. Vanilla Extract
- 1/8 – 1/4 Cup Maple Syrup depending on how sweet you like them
- 1/2 Tsp. Cinnamon + more of serving
- 1/4 Tsp. Nutmeg
- 1/8 Tsp. Cloves ground
- 1/2 Tsp. Salt
- 4 Whole Cardamon Pods, Cracked
I make these the night before I want them so they have time to set up in the fridge and they are easier to divide into 4 equal portions. Pour the uncooked oats in a dry saucepan and toast over a medium heat unit they become a little golden and fragrant, they will almost smell like popcorn. Then add your milk and stir with a whisk and bring just to a boil, reduce heat to low and simmer. Add in all your spices and salt and taste as you go to see if you need to add anything. You will want to stir this pretty often or else they can easily burn and stick to the bottom of your pan. I let them simmer for about 45 minutes, not all the liquid will be absorbed but that is ok, pour the cooked oats into a glass bowl, let it cool on the counter and then keep it covered in the fridge. When I go to serve them the next morning I cut it into 4 equal sections and have one per morning. I scoop it into a bowl and cover it with about a half a cup or so of the same kind of milk I cooked it in and then warm it up in the microwave for about 2-3 minutes, stir and sprinkle with more cinnamon then serve them hot.
